If you have extra height (like the double on jump_beef) look up to see when the rockets you sync are going to hit the ground. If you don't, like the double in jump_quba, just practice it until you get a feel for when you need to shoot.
Generally the answer to questions like yours is "more practice." So whenever you're in doubt, practice some more.
